I always have a tough time figuring out easy, healthy meals when J. is away. He eats so much more than me, it is great to cook for 2.
An easy meal, and somewhat healthy, Bean burritos.
Heat beans in a saucepan.
Cut:
Lettuce
Tomatoes
cheese.
add salsa, whole wheat wrap and hot sauce...
stick it on the griddle for a bit...

That looks great Jo. What kind of beans do you use? I have a hard time figuring out easy things to make for lunch. This would be perfect!
ReplyDeleteThanks!! For these ones, I just used a can of refried beans. Sometimes I make a batch, but this takes a lot less time!!
