BEST Paninis EVER

These were SO good... like SO good... even Jordan who usually says my cooking is "fine" said "OMG Jo.. these are AWESOME!!"

First, I made homemade garlic Mayo

  • 4-8 cloves garlic
  • 1/2 tsp sea salt
  • 2 egg yolks
  • 1 tbsp white wine vinegar
  • 1 1/4 cups olive oil

  1. Crush the garlic cloves with the salt, then place in a bowl and stir in the egg yolks and vinegar.
  2. Gradually beat in the oil, a little at a time, beating well after each addition until thick and glossy.
  3. Season to taste.
  4. Store for up to 5 days in the fridge.
Holy crap was this good...
